Day 52 Outtake

Would you like to make a Solanaceous Casserole? It’s really easy.
You will need:
- A casserole, doh!
- A microwave
- Potatoes
- Tomatoes
- Aubergines
- Carrots (optional — I prefer the dish without)
- Onions
- Quickmelt cheese
- Sharp cheddar cheese (actually any cheese will do; the harder to pronounce, the better)
Instructions:
- If you’re feeling lazy, bring out your food processor to chop up the vegetables into nice rounds/ovals. Otherwise, go do it by hand.
- Slice both cheeses into strips. Do refrain from sampling too many.
- Layer each ingredient in the casserole starting with the potatoes. Why potatoes I do not know. I just follow mummy’s instructions. Make sure to really flatten each layer to pack in everything in the casserole; the vegetables water when heated. Note: quickmelt cheese should be layered in the middle and placed on the top. You may also add butter on top if you want.
- Microwave on high until vegetables (particularly the potatoes, aubergines, and carrots) turn soft. That would be between 15-20 minutes.
- Place a hot slice on your plate; the aroma should convince your friends that eating vegetarian isn’t so bad.
